boy, that's good brisket!

We are one of those families that actually really likes corned beef and buys several when St. Paddy's sales come around. So, tonight I had to make brisket in honor of our ginger-haired friends.

If you're ever in the mood for brisket, here's a great recipe that's super easy and super delicious. Can't beat that combination...

Guinness-Braised Beef Brisket

2 c. water
1 c. chopped onion
1 c. chopped carrot
1 c. chopped celery
1 c. Guinness Stout
2/3 c. brown sugar
¼ c. tomato paste
1 T. dried dill
1 14.5oz can beef broth
6 black peppercorns
2 whole cloves
3 lb. corned beef brisket, trimmed

Combine all but beef in slow cooker; stir to blend. Top with beef. Cover and cook on HIGH for 8 hours or until beef is tender. Remove beef; cut diagonally across grain into ¼” slices. Discard broth mixture.
