Chicken Enchilada Pasta

This was a Pinterest find that, admittedly, looks pretty weird.  But, trust me, it is SO GOOD!  I hope you enjoy it as much as we did!


Chicken Enchilada Pasta

2-3 chicken breasts, cooked & shredded {or shredded rotisserie chicken…I used the breasts}
2 tbsp. olive oil
2 garlic cloves, minced
1 medium onion, diced
1 red pepper, diced
1 {4 oz.} can diced green chiles
1/2 tsp. salt
2 tsp. chili powder
1 tsp. cumin
2 {10 oz.} cans green chili enchilada sauce
2/3 cups red enchilada sauce
2 cups shredded "mexican" cheese
1 cup sour cream
1 lb. Penne pasta
Toppings: Avocado, Green Onions, Black Olives, Tomatoes, Sour Cream

  1. Cook chicken, drain, and shred {or shred your rotisserie}.  Meanwhile boil pasta according to package and chop the veggies.
  2. Heat the olive oil in a deep skillet and cook onions for about 3-5 minutes.  Add garlic & red pepper and cook for another 3-5 minutes.  Add cooked chicken, green chiles, cumin, chili powder, salt, & enchilada sauces.  Let sauce simmer for about 8-10 minutes.
  3. Add cheese and stir until the cheese is melted and heated through.  Now toss in the sour cream and cook on low heat or the sour cream will curdle.  Stir until sour cream is well mixed and heated through.
  4. Drain pasta & return to pot.  Pour sauce over pasta and mix well.  Serve and garnish with avocado, tomato, green onion, and a dollop of sour cream.
**I also successfully froze half this recipe (it makes a lot!) and it was just as good the second time around!  Just make sure to cook your pasta al dente so it isn't too soggy.**

A little privacy please!

 Cornelia looooves bath time.  As soon as dinner is over she pushes back her little chair and says, "Baaa?".  Sometimes it's a go, sometimes it's not, but she's always thrilled when the answer is "yes"!

Now that the kids are getting bigger we've graduated from the toss them all in the tub and get 'er done mentality into some take showers and some take baths.  Often times Max and Cornelia will still take a bath together, especially if we are short on time (and we usually are!).

On this particular night though, Ruby had showered earlier, so Max got to shower in the master bath while Cornelia took her bath as usual.  Jared had that girl cleaned up and into her footie pajamas before Max had even gotten soaped up, so she went off exploring while we cleaned up the kitchen and decluttered a bit from the day.  All of a sudden we realized that it was a little too quiet so Jared went to find our littlest trouble maker.  Imagine his surprise when he found her...


Why Maxwell didn't raise the alarm I'll never understand!  I guess he's just so used to bathing with his baby sister that he didn't even pay attention to the little problem of her pjs being on!  Silly kids!

Put your game face on!

Jared and I have really been getting into playing games again the last few weeks.  Our favorite-- Settlers of Catan.  Now, yes, we do realize that this is supposed to be a game for three or more players, but it seems to be working just fine with the two of us.  I think our tired minds appreciate the relative ease of the two player game!  Oh and guess what!?  I finally won two in a row yesterday (not that I keep track of that kink of thing--wink, wink)!

Potty Training!

Guess who thinks she's potty training!?  She has been having a ball playing with her potty chair and even had a success with it recently!  It may have been by accident, but I still praised the snot out of her so that she really got that it was a BIG DEAL!

Now Mommy just has to get on board with the whole potty training thing. Yuck.

Super Fun Playset!

I mentioned in the birthday post about the play set that Jared built for the kids, so I thought I should finally post a picture of it!  It's pretty amazing with a clubhouse, bridge, monkey bars, slide, bucket and pulley, and flower box.  The latest addition is a tire swing--whee!  Coming soon-- a zip line!  It has been a ton of fun, especially through this very mild winter.  I sure do have an amazing hubby!
